I am glad you mentioned Pine Creek Cookhouse in Aspen.  It is also one of my favorites.  You can also cross country ski to the restaurant.  I had never done it before, but we had a really great time.  If anyone is planning a trip to Aspen http://www.foodieaspen.com/ is a good place to start for making restaurant reservations.  The had Pine Creek on their HOT LIST for the winter.
