Editorial Review

Keeping with the burgeoning neo-bistro scene around Faidherbe-Chaligny, Basque chef Stéphane Chevassus (ex-Guy Savoy, Michel Rostang) has revitalized this aging joint with an ambitious kitchen. Fresh ingredients from sustainable producers come together in expect pairings like langoustine and mango, soy-sauced cod steak, and citrusy fried squid. Flying ever-so-slightly below the radar, but not for long. Crazy-affordable €13 lunch includes wine, and €29 dinner menu is a steal. Closed Saturday and Sunday.
