Tony Mantuano made a name for himself with the high-end, highly acclaimed Spiaggia–not to mention his appearance on Top Chef Masters–but this late-night Italian pizza place is not second-rate. Named after a type of cheese from the Piedmont region of Italy, the restaurant will have mild dairy-loving diners at the start with its mozzarella bar (stuffed mozzarella, burrata, and more on tap). Wood-fired 12-inch pizzas is where the meat is at—quite literally—on this menu: pork belly meatballs, lamb sausage and more. In drinks, cocktails focus on Italian favorites (limoncello, grappa and prosecco), plus Seedling’s hard cider on tap.
