Certainly S. Starr has made a name for himself in 20 plus years of restaurant and nightlife impresarioness in Philadelphia. Butcher and Singer may be destined to be his crown jewel, however. A sumptuous clubhouse of a place, B&S is modeled after the power-watering holes of bygone days — Delmonicos, Brown Derby, 21 Club, et cetera. Classic versions of steak and seafood make up the menu as Ella and Frank serenade you. Philly power brokers know to call ahead for one of the coveted booths.
