Small space that packs South American punch. Long bar holds no more than 20 stools at a time, known to serve some of the best oysters in town. Focus is molecular gastronomy sans long-haul cooking. Keeping in mind the narrow confines of space, the two chefs behind the bar will personally give/tell you the menu, take your orders, construct dishes right in front of their customers/audience. Menu's mostly creative spins on traditional ceviches. Try shooters smoked with burning tea leaves or tiger prawns "reverse butterflied" with shallots and rocotto.
