Extensive tofu selections prepared fresh five times daily come in interesting forms. We like the ones shorn to yuba (thin sheets of tofu skin), scooped into lacquer boxes and steamed in clay pots. Who knew that bean curd was so playful? Not your usual California roll, brah.
