Pierre Gagnaire's approach to molecular gastronomy ranges from inspired to downright strange. This outpost next to the Deyrolle taxidermy shop is more straightforward than his eponymous resto in the 8th. Basic scallops with shallot butter share menu space with the squid-inked “black croque monsieur” (which happens to be one of the best in town). Christian Ghion’s interior is clean but atmospheric—a finely lit, white, gray and sea-glass space with plenty of steel and geometric marine motifs. A singular table with a €90 menu. Closed Saturday lunch and all day Sunday.
