New York celebrated chef (and not to mention Michelin-star-adorned) Alfred Portale runs the show at Fontainebleau's signature steakhouse. Fusing Italian, French, and Asian influences, Portale's menu includes the finest cuts of beef, plenty of seafood, and adventurous dishes left and right. Each one is an "architectural masterpiece" on a plate, with carefully chosen textures and colors. As for the resto's actual architecture, it's not what you expect of a serious steakhouse. Soft, tan surfaces, multi-colored wooden pillars, modern decor, and an open kitchen on the first floor; airy, al fresco dining on the second. A glass wine tower and handblown glass chandelier that cascades down to the first floor through a cut-out ceiling run the length of both. Worth fasting for.
