Coining the (obnoxious) term "bistronomic" to describe his new restaurant, famed chef Graham Eliot Bowles takes a departure from the formality of his former home at the Peninsula. At his namesake venture, Bowles offers his signature style of molecular gastronomy with dishes like roasted beet salad with puffs of whipped goat cheese and with spicy buffalo chicken wings with Budweiser bubbles. Doing so in a setting more laid back than assuming, (check out your waiter's Converse kicks) he leaves the diner room for a playful feeling of adventure.
