Linton Hopkins, the mind behind Restaurant Eugene, partnered with wine guru wife Gina and three bartenders for this gastropub with South in its mouth. The mindset is meaty. House-cured meats hang about. Adventurous diners grab sweetbreads, and dip fried pork ears, fatback and tails in barbecue sauce. Catfish fingers, skirt steak and more offer less intimidation. And with bartenders at the helm, cocktails are smart like the bitter, rum and grapefruit-laden Brass Tap.
