Loyal fans of the former sister venue, Honmura An, in NYC's SoHo will recognize the soba at this Rappongi spot.  A window in the sleek dining space overlooks a workroom where the chef rolls buckwheat dough into thin sheets and slices it with a sobabocho (soba knife) into the large strands you see on  your plate. Start with the steamed clams before digging into luxurious uni (sea urchin) soba.
