Bright star in New Andean gastronomy brings judicious clientele to teensy, out-of-the-way neighborhood spot. Chef cuts fresh fish from the Sao Paulo state port of Santos on a long wooden bar. The open kitchen style is reminiscent of a sushi spot, but the ceviche and other raw fish are in the style of Peruvian cuisine. Filet mignon and Inca-style dehydrated potato as well as regionally grown fruit and spices from Peru, some dating back to Inca days. Walls are blocked in color; wooden chairs and tables keep the vibe discreet and simple. Pisco sours can be drunk at the sidewalk tables without fear of too much pedestrian curiosity.
