Sake-sseurs search to find this intimate Ginza bar hidden on the second floor of a drab building. The space has more sake than seats (a dozen to more than one hundred, a ratio that works well). Expect dark woods, soft lights, and limited edition, seasonal sips, many from small producers. Tire of the specialty and there are 20 to 30 types of shochu. Gaze at the impressive collection of bottles behind the bar; order small plates like tofu marinated in chunky miso.
