The latest addition to the Fontainebleau restaurant regalia is a poolside south-of-France transplant headed by Exec Chef Sean O'Connell. Despite bi-level behemoth status, it's as casual and cool as the seaside breeze wafting in from the ocean that just happens to be there. Menu is not a head-scratcher: fruits de la Mer, salads, crudités, char-grilled seafood and meats. Topless top floor dishes out quality views of poolside action, and a vibrant DJ and bar scene puts the Miami into 'only in Miami.'
