Pascol Barbot’s whiz-kid New French has earned him three Michelin stars in record time - unheard of for a place that seats barely more than 20 and doesn't even have a menu. Book well ahead to get in on the “dinner surprise,” one of the most reliably creative, market-driven plate parades in Paris today. Expect a dozen small plates with unexpected treats like cardamom yogurt, lime-zested roast endive, crab in avocado “ravioli,” or perfect roast guinea fowl.
