Jean-François Piège made headlines last year when he left Les Ambassadeurs, the 3-star restaurant of the Hôtel Crillon, to open a lowly brasserie. This was not to be just any brasserie, of course. Opened in partnership with the notorious Costes hoteliers, Thoumieux turned out to be a glitzy see-and-be-scene. While the food hasn't always been up to par, fans have been holding out hope for Piège's eponymous gastro, set to open upstairs before the end of September. Le Piège will serve only twenty-some covers in an intimate space designed by architect India Mahdavi, and the chef plans to cook sur mesure according to his inspiration of the moment.
