Christian Etchebest has become one of the city's neo-bistro poster boys based on the success of this popular place. The menu changes according to his (and the market's) mood but is always excellent, imaginative, and hearty. Pan-fried foie gras with marinated wild mushrooms, pork-foot parmentier, wood pigeon and roe-deer medallions. Caring service, lively crowd, classic space. €24/28 lunch, €30 dinner, €40 tasting. Closed Sunday and Monday. Also runs La Cantine du Troquet and Le Grand Pan.
