Like many of the new generation of young Parisian chefs, Cyril Aveline completed his gastronomique apprenticeship and then decamped to further ignite the bistronomie craze. His intimate Les Bistronomes makes this clear by name alone. But he's also true to the classics, applying his refined touch to onglet de boeuf and parmentier of pigs' feet.
