The lone destination on rue Mélingue, Hermès is vaunted for luxuriant southwestern classics at a great price-to-quality ratio. The yellow dining room, hung with amateur still lifes, is overseen with motherly care. Chef Oliver Laterrot’s short, seasonal menu changes weekly, but expect plenty of classics like foie gras and cassoulet. The House specialty is the rare Bigorre black pig, a rescued heirloom breed from Gascony with exceptional meat. Menus at €15 (lunch only) and €30.
