Chef Charlie McKenna spent seven years testing and perfecting the 'cue coming out of his two custom peach-wood smokers (both made in GA where BBQ is serious business) in Bucktown. Billed as Southern-style, urban barbecue, the usual fare like pulled pork and baby back ribs is doused with any one of the five house-made, 15-ingredient sauces like the Carolina Gold (mustardy), the Alabama-style Ivory (vinegary) or the Memphis-style Smoky (um, smoky). All served in a setting outfitted with reclaimed wood tables, butcher hooks, and Edison bulbs. Custom Metropolitan lager to wash it all back with. Don't forget the napkins.
