The presse de lièvre, foie gras et cèpes (wild hare, foie gras, and porcini mushrooms) is a staple, but the daily carte features plenty of other freshly-shot goodness. Year-round Rostang serves luxuriously updated cuisine bourgeoise like quenelles de brochet in lobster sauce and canard au sang.
