Sao Paulo's first all-organic bakery melds owner Rafael Rosa's globe-trotting experience in the hospitality business with a refined take on traditional faves. Like the Brazilian pao de queijo made so light it could almost fly. Other goodies including a 70% Belgian chocolate cake, are distinctly American and Euro-flavored. Emphasis is on taste and not on size. THe bakery is smaller than some cubicles, if they were all chromed out and walled over in dark wood. Close quarters bring out the chatty in patrons who stand and eat when the four chairs are full.
