When group of 19 bitchy critics came together to "correct the errors" of the Michelin guide, Gagnaire was the only three-star chef to walk away unscathed. This is one cook who continues to earn his hype. Collaborating with molecular gastronomist Hervé This, Gagnaire takes plenty of risks and produces stunning compositions that are both playful and cerebral. Curiosity and a fat roll are both requisite at this €200+ address. Closed for lunch on Wednesday and Sunday, and all day Saturday.
