It was a smart move on the part of famed hotelier Ian Schrager to retain the historic name Pump Room for the revamped restaurant in Public hotel (formerly known as the Ambassador East). With a menu created by Jean-Georges Vongerichten—inspired by the chef’s ABC Kitchen in New York—the restaurant supports the latest, greatest trend in the restaurant industry: farm to table, as well as a daily chef’s tasting menu. Food is on tap through the late-night supper hour of 1am, tapas-style, with options ranging from the classic liver toast app to homemade ricotta ravioli to fried organic chicken with sweet corn and chili glaze. Nodding to the past, Pump also offers a fuss-free portion of the menu, with classics like grilled Lake Superior whitefish and bone-in ribeye. Don’t forget to take in the view up above at the ceiling of illuminated orbs.
