New Gramercy Park Hotel owner, Ian Schrager, turns to '80s art star Julian Schnabel as resident designer, bringing velvety, bohemian vibe to cathedral ceilings and walls crammed with big art (Basquiat, Twombly, and...Schnabel). Best on toasty winter eves by the massive fireplace. Reservation-only after 10pm, book a room for preferential treatment.

The art work and plush interior together make Rose Bar a most atmospheric hotel bar. You will want to come back again and again. The watermelon martinis cannot be beat, regardless of the season.
