A much anticipated new opening from Sven Chartier and Ewen Lemoigne, the young chef-sommelier team who made their name at the nearby wine bistro Racines. Here at Saturne, a beautiful and airy space near the Bourse, Chartier is managing a team of chefs and turning out a no-choice menu with four or six dinner courses for €37 or €59. Lemoigne presides over the large selection of (mostly) vins naturels without the aid of a printed wine list. Expect that, and other kinks, to be ironed out soon.
