Upon entering the small shop you'll most likely meet Ms. Saxelby. She'll probably offer you sample after sample, and you'll probably end up buying more cheese than you thought you needed. Her website offers descriptive details about each cheese's origins and how it's made, with about 90% of the cheese being made right next door in upstate New York or New England. These cheese's are pretty exclusive, so impress your out of town friends with a trip to the market and school them in lactic trivia.
