Great idea. Snag an old diner, you know, formica tables, lots of vinyl. Bring in a chef who knows his ratatouille from his ramen. Add a bar with fancy drinks and an event space where you book hipster acts (Yo Santigold from Brooklyn!) and viola. A bar/club/restaurant/diner type, er...thing. Key lime pie and meatloaf are still on the menu, but so is edamame and pomegranate margaritas. Hipster store Sailor Jerry's has cocktail specials on Thursdays, adding to the cred.
