Daniel Rose's long-awaited restaurant has finally reopened around the corner from the Louvre. No longer a solo act, Rose is now cooking with a talented team and the open kitchen is turning out a €64 tasting menu at night and a less-expensive (but still impressive) bouillon-based lunch. Dishes are innovative, improvisational and not for the faint of stomach - recent meals featured pigeon, sweetbreads, and deep-fried shrimp heads. Yum. Look for a basement wine bar to open later in the fall.
