As with most things in Park City, Squatters migrated. Like its sibling rival, Redrook Brewery, Squatters began life as a jam-packed Salt Lake brewery-that-could. The lessons learned in the crucible of valley brewery-dome include killer seared ahi springrolls and the recipe for the BlackBook pick for best local beer, Chasing Tail. The PC innovations are structural: better space, modern, based on the solid good-karma foundation of a former beloved café, right in the heart of Park Proper. Casual, crowd like a kind-of-drunk holiday party.
