Located in a former smokehouse near Smithfield meat market, St John specialises in what chef Fergus Henderson terms ‘nose-to-tail’ eating – ie, offal. The decor – cream walls and bare floorboards – is simplistic, and allows a mixed crowd of trendies and City businessmen to tuck into the likes of ox tongue and carrots, and roast bone marrow and parsley salad without distraction.
