Just-off-the-circle salad joint steers the made-to-order salad craze into the realm of nerdy hipsterdom. White floors, blonde wood benches and biodegradable dinnerware promise sterility while creative salads re-invent the genre. Opt for deconstructed guacamole or go nuts with nuts. Veggies fresher than Zach Efron, tossed with toppings sold like iPhone apps—mostly free, a few cost upwards of a buck; some work, some don't. DC's batch of young professionals are eating it up. That, and the fro-yo.
