At Switch, Marc Poidevin (former executive chef at the LV outpost of Le Cirque) creates a menu of French-inspired steak and seafood. The Disney-esque gimmick is in the setting, or settings, as the restaurant will "switch" decor—cielings, walls, paintings—and lighting during the course of a meal. For example, you may eat your appetizer amidst a setting of billowing blue baroque draperies, but by the time the entree arrvies, you're surrounded by minimalist champagne ribbons and louvers. If you want the show without the dinner, the bar right outside offers a fine view of the proceedings.
