Preview: This Australian-based boutique roaster breaks all the rules. Sticking out from the homogenous coffee scene brewed up in Williamsburg, Toby's makes coffee designed for you, by you. Yes, no more choosing from a menu, but simply from your imaginative, caffeine-craving cranium. And unliked its cramped, so-close-to-hipsters counterparts, this shop is a 3,000 square foot timber-floored estate. Opening January 9th. May the roasting revolution begin.
