Nobu defectors shine brightly, striking out on their own with sushi better than Roku. Cooked dishes like lobster tempura show power. Cuts are fresher off-the-boat than that cool kid sitting next to the sushi chef, here to study from Tokyo, but spending more time listening to dancehall at Dragonfly. They don't have Matsuhisa's Fonzie touch, but the inventive sushi is still great at the right value. Oysters and uni make a smart start.
