A bit tricky: you want number 24 Rue de Belleville, not any of the other similarly-named establishments up and down the street. This is the one that makes its own dumplings, galettes, and pork brioche on site. Crab and tofu soup and other house specialties are up for it as well. A rare, low-key star in Paris's other Chinatown.
