A German chef cooking modern Japanese fare in downtown Miami? Sounds about right. The brainchild of chef Rainer Becker, Zuma's Miami location in the EPIC Hotel is the latest in its portfolio of upscale eateries around the world. Among the highlights: prawn and black cod dumplings; yellowtail sashimi with green chili relish, ponzu and pickled garlic; sliced seared beef with pickled daikon and fresh truffle dressing; pork belly skewer with yuzu mustard miso; and miso marinated black cod, wrapped in hoba leaf. Sushi, too. Nobu who?
